Chardonnay Barrel Fermented Liquifaction
We diverted some Liquifaction Kölsch wort into some Stonestreet Winery Chardonnay barrels and pitched our house ale yeast strain into each barrel, allowing the beer to go through fermentation in the barrels at cellar temperature. Once fermentation is complete, we move the barrels into cold storage for about 3-4 weeks of lagering before we package the beer. The result is an incredibly refreshing and unique take on the Kölsch style with a pronounced yeast and malt character that is rounded out by just a hint of toasted French oak and white wine aromatics. While the beer may see some barrel time, this beer is NOT sour or funky!

Behind The Name
We already adore Kölsch and Kölsch Style Ale- light, crisp, and clean while packing a ton of flavor and nuance into a sessionable package. What’s not to love?! So why take a perfectly good beer on it’s own and change that? We’re happy to report that after fermenting and lagering our Liquifaction Kölsch Style Ale in select Stonestreet Chardonnay barrels, the results are absolutely worth the experiment! It’s everything you know and love about Kölsch, with just a bit of white wine character and aroma, as well as a more pronounced yeast and malt character. Due to the nature of fermenting at cellar temperatures, we can only make this beer right before the heat of summer takes hold, so availability is VERY limited until the next time the beer comes around. This beer is a perfect warm weather sipper, full of nuance and complexity for the beer geek to unpack, but also fun and approachable to the craft beer novice. Prost!
